Job Summary - Assist the Room Chef in all duties necessary to maintain the consistency and quality of the food in the outlet. In the absence of the Room Chef, leads and manages all kitchen staff; responsible to comply with Health Department regulations as well as company vision, mission and objectives.
Duties & Responsibilities - Ensure highest quality/appearance of all food prepared and served from the kitchen; ensure that preparation and presentation are according to standards, recipes and procedures; follow Chef's guidance regarding food costs and staffing; immediately communicate guest concerns to Chef, Restaurant Manager or other food manager; ensure that staff keeps general work areas, equipment and storage units clean and sanitized; ensure that staff has resources needed in food preparation areas; train staff on an ongoing basis; follow and enforce policies and practices regarding proper sanitation and food handling procedures, including frequent hand washing; follow and enforce all Health Department food safety and sanitation policies; as instructed by Chef, lead, manage, staff, train, observe and correct employees in regard to all assigned kitchen duties. Other duties as assigned.
Knowledge, Skills & Abilities - Must have strong guest service and communication skills; follow Health Department regulations as related to cleanliness of food areas; follow established safety guidelines; immediately report hazards and maintenance issues to Room Chef, F & B Director or Executive Chef; knowledge of casino promotions to assist guest if needed; sous chef/lead cook experience working in a high volume kitchen for at least one year is preferred; strong knowledge of Health Department standards; strong mathematical skills and knowledge of weights and measures as related to production kitchen; Serve safe Certified preferred; must have current Health Card; lift, push, pull and carry at least 50 pounds; bend, stoop, twist, requires frequent standing walking and reach; work in an area of cigarette smoke, food smells, varying noise levels, carpeted and hard floors, and varying temperatures; good hand to eye dexterity; requires dependable attendance and the ability to appear for work on time; requires the ability to lead and manager others; interact effectively with co-workers; understand and follow posted work rules and procedures; accept constructive criticism.
