Job Summary - Responsible for the cleanliness and sanitation of all kitchen areas.
Duties & Responsibilities - Supervise dish and ware washing; ensure all areas are kept clean and sanitary including but not limited to floors, walls, ceilings, refrigerators and storage rooms; train all employees in the correct use of all chemicals and cleaners; immediately communicate concerns to the Room Chef, Executive Sous Chef and Executive Chef; keep general work areas, equipment and storage units clean and sanitized; practice and promote proper sanitation and dish washing procedures; knowledge of handling chemicals and cleaners; follow all Health Department food safety and sanitation policies; monitor daily schedule for labor coverage and cost control; review paperwork, logs, for every shift; report any maintenance issues promptly; enforce policies and procedures within the department. Other duties as assigned.
Knowledge, Skills & Abilities - Ability to stand for long periods of time is essential; ability to lift, push, pull and carry at least 50 pounds is required; must be able to work in humid and cold temperatures; must be able to communicate effectively, verbally, and in writing with co-workers and supervisors; have knowledge of Health Department regulations; must have a current Health Card; must have knowledge of basic casino promotions to assist guest if needed; experience in a high volume kitchen for at least 2 years preferred; knowledge of Health Department standards as related to kitchen work areas; must stand and walk throughout the kitchen areas for up to 10 hours a day; lift, push, pull, twist, climb stairs and reach from floor to above shoulders; work in an area with cigarette smoke, food smells, varying noise levels, carpeted and hard surface floors, and varying temperatures; good hand to eye dexterity; requires the ability to follow directions from a supervisor; requires dependable attendance and the ability to appear for work on time; requires the ability to follow directions; requires the ability to interact effectively with co-workers; requires the ability to understand and follow posted work rules and procedures; requires the ability to accept constructive criticism.
